I for one am a huge fan of smoothie bowls. They can be a quick meal on the go, and they are also easy on the digestive system. They also serve as little works of art. I mean I’ve seen some smoothie bowls on Instagram that look like mini Picasso’s in a bowl – it’s crazy.
What makes them so great is when the thickness is on point. Smoothie bowls are meant to be a little thicker than a snicker (or regular smoothie) so they hold those toppings just right. With a thinner smoothie they would just sink right to the bottom. I also love being able to get in a good amount of veggies first thing in the morning. If you find it difficult to incorporate veggies during the day, pack your smoothie bowl full of them – you won’t be able to taste the difference.
Mint Cacao Smoothie Bowl
I am a die-hard smoothie bowl fan, but they can get a little out of control in the sugar department if you’re not careful. This mint cacao smoothie bowl hits all the right spots when it comes to taste, and what’s awesome is it’s minus the sugar! That’s all thanks in part to the cacao nibs.
So what’s the difference between cacao and chocolate? They both come from the same place. Cacao comes from cold-pressing unroasted cacao beans. The process removes the cacao butter, while keeping all the nifty antioxidant properties you hear so much about in studies. Cocoa (or chocolate) is when the cacao has been roasted at high temperatures. This not only lowers the nutritional content, it also diminishes the health benefits you get with cacao. That would be your run-or-the-mill grocery store chocolate.

This mint cacao smoothie bowl is quick to make, sugar-free, dairy-free and perfect for busy mornings on the run! It's also loaded with healthy fats to keep you full all morning long.
- handful of spinach
- frozen zucchini
- frozen cauliflower rice
- frozen coconut meat
- 1 tbsp. mint leaves
- 2 tbsp. cacao nibs

- 1 tsp coconut butter
- 1/4 cup coconut milk
- Drop 3 to 4 ice cubes in the blender before adding in the remaining ingredients.
- Add in all of the veggies, mint and cacao. Then add the coconut butter and collagen peptides.
- Add in a small amount of the coconut milk and begin blending. If needed, add a little more milk to blend - being careful not to add too much.
- Top with mint leaves, cacao nibs, shredded coconut and favorite nut butter.
