I’m a creature of habit. This is totally true when it comes to food. I pick one type of food I like and I will be loyal to that food for life.

That’s how I am with chicken noodle soup. If it’s not chicken, or noodle, it’s not my jam.

That’s all fine and dandy when you’re a kid, but now as a grown up who is a. on a budget b. eating a paleo-type diet, that’s a little harder. That’s also the fun part about the paleo diet is that it’s pushed me to steer out of my comfort zone a little bit. That’s where this paleo chicken sausage and sweet potato soup comes in perfectly.

Paleo Chicken Sausage and Sweet Potato Soup

This paleo chicken sausage and sweet potato soup is really easy to make. I wanted something a little different from the norm, but I also want to make sure it was edible. My first criteria for anything I eat: is it edible? I sure hope so 🙂

I use the Garlic and Herb chicken sausages from Trader Joe’s for this soup. Those chicken sausages in particular add a nice flavor to the soup, and they are pretty cheap at Trader Joe’s (under $5). It really depends on your personal tastes, or favorite brand.

I also use Bonafide Provisions chicken bone broth for the paleo chicken sausage and sweet potato soup. I really like using their bone broth because they are certified organic, and they are also pretty local to me in Southern California. I also use this brand of bone broth for sipping.

Paleo Chicken Sausage and Sweet Potato Soup

Perfect for a rainy day or when the flu tries to insert itself into your weekend plans, this savory paleo chicken sausage and sweet potato soup is just what the doctor ordered. Featuring minimal ingredients, this soup takes less than 30 minutes to make!

Ingredients

  • 16oz Bonafide Provisions Chicken Bone Broth
  • 1 pkg Trader Joe's Garlic and Herb Chicken Sausage
  • 1/2 yellow onion
  • 1/4 tsp minced garlic
  • 1 tbsp. olive oil
  • 1/2 large sweet potato
  • 1 cup kale or spinach
  • 1 bay leaf
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • 1/4 tsp tumeric

Instructions

  1. Pre heat a large pan on medium heat. Add the olive oil, chopped yellow onions and minced garlic to the pan and let it cook until the onions are transparent (about 5 minutes).
  2. Once the onions and garlic are cooked, add the chicken sausage to the pan and let them cook thoroughly for 5 to 10 minutes, stirring frequently so the onions don't burn. Once the chicken sausage is cooked, cut them up into smaller 1/4 inch thick slices and place back into the pan.
  3. Add the sweet potato, bone broth, salt, pepper, bay leaf and turmeric, and let simmer until boiling (about 10 to 15 minutes). I also make sure that I can pierce the sweet potatoes with a fork.
  4. Add in the kale or spinach, and cook for an additional 2 to 5 minutes.
  5. At this point I remove the bay leaf, but you can leave it in as well. Let sit for 10 minutes to cool.
