This paleo crockpot beef stew is the perfect Whole 30 approved dinner that’s also gluten-free and dairy free, for the family on those chilly fall nights – or when you wish it was a chilly fall night.
Fall is here and I couldn’t be more excited for sweaters, and falling leaves and chilly nights and.. oh yeah right I live in California that’s not a thing out here.
Out here we technically have two types of seasons, slightly hot and stupid hot. There really is no in between.
That doesn’t mean I can’t get excited about everything Fall, including all the foods. While Fall may be the poster child for all things pumpkin, I’m just over here looking forward to warming, comfort foods. For those of you who suffer from digestive issues like I do, your digestion thrives on warming foods. There isn’t any food on the planet that’s more warming and nourishing than a good soup or stew. What’s even better is a good soup or stew that practically cooks itself while you’re at work all day. Now THAT is something I can get behind.
Paleo Crockpot Beef Stew
This paleo crockpot beef stew was born out of my curiosity for exactly what it would actually taste like. Also because I have a fridge full of beef.
But in all honesty though, stews were never something I enjoyed as a child. I’m a creature of habit when it comes to food, so if it didn’t involve chicken or a noodle (or the occasional stars) I wanted nothing to do with it. My how the times have changed.
This paleo crockpot beef stew is loaded with tons of organic veggies and good quality meat. You absolutely don’t HAVE to use organic vegetables, but a few of the vegetables in this recipe are commonly found on the Dirty Dozen so I’d say spend a little bit more on those, or you can also pick them up at the local farmers market. Same thing with the meat – I splurge for pasture raised meat because I know I’m not getting any unwanted hormones. One of my favorite sources of pasture raised meat is Primal Pastures in Murrieta, CA.
My favorite part is the bone broth. Especially if you have gut issues or want to improve your gut health, bone broth is your best friend. I love Bonafide Provisions bone broth, they are transparent with their process and they just taste so amazing. They are perfect for sipping, but also adding into stews like this paleo crockpot beef stew.
I also didn’t go too crazy on the seasonings, the beef and broth I felt bring out enough. But you know your palate, and if you want to jazz it up than get at it!
- Primal Pastures beef stew cut
- 1 package of Bonafide Provisions beef bone broth
- 3 large carrots
- 2 celery stocks
- 2 cups of mini red potatoes
- handful of pearl onions
- 4 crushed and minced garlic cloves
- salt, pepper and parsley to taste
- 2 cups water
- 1 bayleaf (optional) remove before
- Start out by seasoning the steak with sea salt and pepper, and sear in a cast iron skillet on each side 2-3 minutes.
- Toss all of the veggies, garlic, seasoning and seared steak into the crockpot along with the broth and water, and set on the low setting for a minimum of 8 hours.
- You can garnish with additional parsley, or enjoy as is.
