For the matcha lover and ice cream aficionados alike, this paleo matcha mint ice cream is the perfect dairy free, paleo friendly “nice cream” treat just in time for the warm summer months, or anytime really.

I make it no secret that ice cream is my favorite food group. Growing up, my fav flavor was hands down rainbow sherbet. For my fellow millennials, who else remembers walking to the local Rite-Aid (formerly Thrifty’s) and getting the double scoop with two different flavors, and walking home as it literally melted all over the place? Ah those were the days.
Now as a grown up who is a little more savvy to ingredient lists and a little less interested in the dairy, the Rite-Aid ice cream is a thing of the past. There are a lot of dairy free ice cream alternatives that are starting to pop up all over the place. One of my favorites is Creamistry who offers coconut and cashew milk bases for their ice creams. Once I found out they offered a matcha flavor, sign me up.
Sometimes though, you just want to make your own ice cream at home. Not only to avoid long lines, but to also make sure you know 100% what is going in to your ice cream. I have made paleo nice cream in the past (check out this Instagram post for chocolate banana nice cream) and until now had yet to make a flavor with matcha. I mean I dropped the ball on that one. But alas, enter in the paleo matcha mint ice cream to the mix.
Paleo Matcha Mint Ice Cream
This paleo matcha mint ice cream is so quick and easy to toss together, the hardest part is waiting for it to freeze, for reals. I also use very minimal ingredients, and really depend on the banana for the sweetness. You can really add in any sweetener of choice, but I use Big Tree Farms Coconut Nectar because it’s low on the glycemic index and literally tastes like maple syrup. You can find this brand at Sprouts and Whole Foods.
For the matcha you can use any brand of your choosing, my go-to though is Vital Proteins Collagen Matcha. I love it because it tastes great, and already comes with the match mixed in, like a gut-healthy delicious two for one.
- 2 Scoops Vital Proteins Collagen Matcha (or matcha of choice)
- 1 frozen banana
- 2 tbsp. sweetener
- 1 can coconut cream
- 1/2 cup coconut milk
- 1/4 tsp mint
- 1/2 cup raw cacao nibs
- Chop up the banana, and place in the freezer overnight.
- Once the banana is frozen, place the frozen banana along with the remaining ingredients (minus the cacao nibs) into a blender and blend until well combined.
- Place the cacao nibs in the blender, and fold in with a large spoon.
- Pour the mixture into a bread pan lined with parchment paper, and place in the freezer.
- When ready to serve, remove from the freezer and let set on the counter to defrost.
