From Conventional to Paleo Game Day Treats
I have a confession to make, I really don’t like football. Ever since I can remember, the Super Bowl is always a day everyone gets together and bet a lot of money on stupid things like who sings the national anthem, cheer on their team, and gaze over what big brand had the best commercials. Let’s be honest though, I’m just in it for the food. THE FOOD is what makes or breaks a good Super Bowl party. I can’t tell you what happened during the game, but I can tell you all about the food!
Some of the traditional party favorites can be seen at any party no matter where you go – you’ll have your buffalo wings without a doubt, pigs in a blanket and nachos. Nachos are such a great versatile food, you can customize however you like. But for those of us who are trying to keep our food choices on the healthier side, nachos might be a major roadblock.
But it doesn’t need to be! These paleo nachos replace traditional corn nachos with sweet potato and you will never know the difference. When making your own chips at home no matter what kind, you know what ingredients go into making it. With the sweet potato, it’s your oil of choice and seasonings, that’s it. You can also add your own protein of choice, but I personally feel they are amazing with the pulled BBQ chicken. What’s also fun about these paleo nachos too, is that you can prepare all the ingredients separately and encourage guests to get creative. The paleo nachos offer a healthy yet delicious alternative.

- For the Chicken:
- 1 lb free range boneless skinless chicken breast
- 1 cup Bonafide Provisions Chicken Bone Broth
- 1/4 cup PaleoChef Vinegar BBQ Sauce
- Salt and Pepper
- For the Sweet Potato Chips:
- 2 sweet potatoes
- 1/4 cup coconut oil or Chosen Foods Avocado Oil Spray
- Pre heat the oven to 450 degrees. Prepare a baking sheet with parchment paper.
- Using a mandolin slicer or a knife, cut the sweet potato into really thin slices. The slicer makes this much easier, but if you don't have one you can make it work.
- Cover the sweet potato chips in the oil of choice, salt and pepper. Lay the sweet potato slices on the parchment paper, and place in the oven for 15 - 20 minutes (Keep a close eye on these as they will burn very easy!).
- The chicken can be prepared in either an Instant Pot or Slow Cooker. If preparing in the Slow Cooker, place the chicken and the bone broth in the Slow Cooker and cook on high for 4 - 5 hours. In the Instant Pot, place the chicken breast and the broth in the pot and cook for 15 minutes.
- Once the chicken is done, shred the chicken using a fork and place in a bowl. Add in the paleo BBQ sauce and stir.
- Serve with your favorite toppings and enjoy!
